Jiangsu cuisine, known as Su Cuisine, is one of China’s most refined culinary traditions. Centered in Jiangsu Province, it encompasses regional branches such as Huaiyang, Suzhou & Wuxi, and Jinling (Nanjing) cuisines, representing the elegance of Jiangnan food culture. It is renowned for its delicate flavors, graceful presentation, and tender textures, with a strong emphasis on seasonal ingredients. The philosophy of “spring for sprouts, summer for melons, autumn for fruits, winter for roots” reflects its harmony with nature’s cycles.

Su cuisine is celebrated for its fresh, well-balanced taste—savory yet subtly sweet—and for its pursuit of harmony between flavor and artistry. It has long been praised as “the finest taste of Southeast China, and among the greatest in the world.”

Cooking techniques include braising, stewing, simmering, slow roasting, and refined stir-frying, with masterful control of heat—gentle yet precise—to preserve the natural essence of ingredients. Knife skills are also legendary: shreds are cut as fine as silk, and slices as thin as cicada wings, ensuring both beauty and flavor permeation.

Seasoning is restrained and balanced, highlighting sweetness to enhance freshness and saltiness to bring depth. Dishes are sweet but never cloying, savory but never overpowering—capturing the grace and refinement of Jiangnan cuisine.
